My sister Stephanie was nice enough to share her improvised recipe for sautéed and smoked lamb.
burgers. I have not tried it yet, but am passing it on for your consideration.
I mean, smoked lamb AND feta! Can you get enough sheep in your life?!
Ingredients
1.5 lb lamb burger
1/4 cup fresh mint chopped
1/2 red onion finely chopped
2 sprigs oregano chopped
Fine zest of 1 lemon
Salt
A splash of olive oil
Directions
Heat olive oil in sauté pan and add onion and small amount of salt. (if you like spicy you could add crushed red pepper or a bit of cayenne at this point).
Cook onions until soft and add 2 cloves of minced garlic (left off list above). Fresh garlic is best – skip the jarred stuff.
Cook for 2-3 more minutes.
In bowl, mix together cooled onion mixture with lamb and the rest of the ingredients and a bit of water if you need for it to stick together. Ok to use less onion, but not ok to back down on the other spices and garlic.
Put the burgers on the smoker over very low heat for ~20 minutes, and then finished them off at a higher temp until internal temp was 160F. This will result in a well done burger so if you don’t want that then take them off around 150 or less.
When getting close to desired temperature pile them high with feta so it gets all melty on the grill.
